Sometimes I get home from work and it’s late and I’m tired and hungry and I don’t feel like making an elaborate meal from scratch. Or rather, I wish I had the energy to make an elaborate meal, because I certainly want to eat something delicious and homemade. With a few strategic leftovers in the fridge, I was able to whip up a quick improvised pizza. This worked perfectly with the leftover fresh ricotta cheese I made the other day and some home cooked tomato sauce that Mike’s mom had brought us. You could use any type of jarred sauce in this recipe and add any pizza toppings that you like. We happened to have leftover collard greens.
Quick Naan-Pizza
Serves 2
Prepackaged Naan flatbread (2)
1 cup Tomato sauce
3/4 cup Ricotta Cheese
1/2 cup grated Parmesan Cheese
1/4 cup sauteed collard greens
1. Preheat oven to 400 F.
2. Place Naan on cookie sheet.
3. Ladle sauce onto your pizza “dough”.
4. Add ricotta cheese.
5. Add vegetables and top with grated Parmesan cheese.
6. Bake for 10-15 minutes until dough is golden, cheese is melted and sauce begins to bubble.
